May Day, Herbal Day @ Eco Village

Join Katherine in a May Day Celebration to experience the abundance of herbal food and medicine right outside our door!
We will spend the morning walking around the Eco Village to learn and identify the herbal bounty that is prolific in Floyd County. A tour of the newly planted herbal gardens to view what cultivated varieties can be encouraged in our area, for home gardens and medicine chests will be included in our time. As we walk, Katherine will share how to use the plants for our health and well being.
In the afternoon, we will learn how to make a variety of herbal preparations. From tinctures, to infusions, to salves and vinegars, we will learn what form of preservation is best for which food/herb. We will see how “playing with our food” can be fun while nourishing our way to a healthful life style.
Bring your own box lunch. Nutritious herbal infusions will served as we wend through our day.
Take home a fresh herbal salve.

Katherine Chantal has been an herbalist for over 40 years. She has taught at herbal conferences in New York, Massachusetts, Maryland, as well as throughout Virginia. While she continues to educate herself with “new” herbal research, her knowledge is rooted in “The Wise Woman” tradition which views plants and weeds as a source of food and medicine and encourages us each to take responsibility for our healing. Katherine’s excitement about the wisdom of the plants is infectious, inviting and encouraging.
